
Quick Vegetable Biryani

Ingredients:
- 2 cups Basmati rice
- 3 cups Mixed vegetables (carrots, peas, bell peppers, beans)
- 1 large Onion
- 1 large Tomato
- 3 cloves Garlic cloves
- 1 inch piece Ginger
- 2 tbsp Biryani masala
- 1 tsp Turmeric powder
- to taste Salt
- 2 tbsp Vegetable oil
- for garnish Fresh coriander leaves
- for garnish Fresh mint leaves
Instructions:
- Wash the basmati rice under cold running water until the water runs clear. Soak the rice in enough water for 30 minutes.
- Fry the finely chopped onions in vegetable oil until they turn golden brown.
- Grind the ginger and garlic into a paste. Add this to the pan and fry for 2 minutes.
- Add chopped tomatoes and cook until they become soft.
- Add mixed vegetables to the pan, followed by biryani masala, turmeric, and salt. Cook for about 5 minutes.
- Meanwhile, drain the rice and boil it in a separate pot until it's 70% cooked.
- Mix the partially cooked rice with the vegetable mixture. Cover and cook on low heat for 10-15 minutes, until the rice is fully cooked and flavors are well combined.
- Garnish with fresh coriander and mint leaves. Serve warm.
