Quick Vegetable Biryani

Ingredients:

  • 2 cups Basmati rice
  • 3 cups Mixed vegetables (carrots, peas, bell peppers, beans)
  • 1 large Onion
  • 1 large Tomato
  • 3 cloves Garlic cloves
  • 1 inch piece Ginger
  • 2 tbsp Biryani masala
  • 1 tsp Turmeric powder
  • to taste Salt
  • 2 tbsp Vegetable oil
  • for garnish Fresh coriander leaves
  • for garnish Fresh mint leaves

Instructions:

  1. Wash the basmati rice under cold running water until the water runs clear. Soak the rice in enough water for 30 minutes.
  2. Fry the finely chopped onions in vegetable oil until they turn golden brown.
  3. Grind the ginger and garlic into a paste. Add this to the pan and fry for 2 minutes.
  4. Add chopped tomatoes and cook until they become soft.
  5. Add mixed vegetables to the pan, followed by biryani masala, turmeric, and salt. Cook for about 5 minutes.
  6. Meanwhile, drain the rice and boil it in a separate pot until it's 70% cooked.
  7. Mix the partially cooked rice with the vegetable mixture. Cover and cook on low heat for 10-15 minutes, until the rice is fully cooked and flavors are well combined.
  8. Garnish with fresh coriander and mint leaves. Serve warm.
