
Quick Thai Fish and Rice Breakfast Bowl

Ingredients:
- 1 cup Basmati rice
- 2 pieces Fish fillets (like cod or tilapia)
- 2 tablespoons Vegetable oil
- 3 Garlic cloves, minced
- 2 tablespoons Thai green curry paste
- 1 cup Coconut milk
- 2 cups Baby spinach leaves
- to taste Fresh cilantro, for garnish
- to taste Lime wedges, for serving
Instructions:
- Start by cooking the rice according to the package instructions.
- While the rice is cooking, sauté the fish fillets in a pan with 1 tablespoon of vegetable oil. Once cooked, remove the fish from the pan and set aside.
- In the same pan, add the rest of the oil and sauté the minced garlic until fragrant. Add the Thai green curry paste and stir for 2 minutes.
- Pour in the coconut milk and let it simmer for about 10 minutes until it reduces slightly.
- Add the spinach to the pan and let it wilt in the curry sauce.
- Once the rice is done, divide it between two bowls. Top the rice with the cooked fish, spinach, and curry sauce.
- Garnish with fresh cilantro and a squeeze of lime. Your quick Thai fish and rice bowl is ready to serve.
