Quick Thai Fish and Rice Breakfast Bowl

Ingredients:

  • 1 cup Basmati rice
  • 2 pieces Fish fillets (like cod or tilapia)
  • 2 tablespoons Vegetable oil
  • 3 Garlic cloves, minced
  • 2 tablespoons Thai green curry paste
  • 1 cup Coconut milk
  • 2 cups Baby spinach leaves
  • to taste Fresh cilantro, for garnish
  • to taste Lime wedges, for serving

Instructions:

  1. Start by cooking the rice according to the package instructions.
  2. While the rice is cooking, sauté the fish fillets in a pan with 1 tablespoon of vegetable oil. Once cooked, remove the fish from the pan and set aside.
  3. In the same pan, add the rest of the oil and sauté the minced garlic until fragrant. Add the Thai green curry paste and stir for 2 minutes.
  4. Pour in the coconut milk and let it simmer for about 10 minutes until it reduces slightly.
  5. Add the spinach to the pan and let it wilt in the curry sauce.
  6. Once the rice is done, divide it between two bowls. Top the rice with the cooked fish, spinach, and curry sauce.
  7. Garnish with fresh cilantro and a squeeze of lime. Your quick Thai fish and rice bowl is ready to serve.
