
Quick Thai Breakfast Fried Rice

Ingredients:
- 2 cups Cooked Jasmine rice
- 2 Eggs
- 1 tablespoon Thai fish sauce
- 1 tablespoon Soy sauce
- 2 stems Green onions
- 2 Garlic cloves
- 1 tablespoon Vegetable oil
Instructions:
- 1. Heat the vegetable oil in a large pan over medium heat.
- 2. Crack the eggs into the pan and scramble until they're mostly cooked, but still slightly runny.
- 3. Add the garlic to the pan and stir until it's fragrant. Be careful not to let it burn.
- 4. Add the rice to the pan and break it up with the spoon or spatula, making sure everything is mixed well.
- 5. Add the soy sauce and fish sauce to the pan and stir until everything is evenly coated.
- 6. Stir in the chopped green onions and cook for another minute. The onions should be just wilted, not fully cooked.
- 7. Serve the fried rice warm, with extra fish sauce on the side if desired.
