Quick Thai Breakfast Fried Rice

Ingredients:

  • 2 cups Cooked Jasmine rice
  • 2 Eggs
  • 1 tablespoon Thai fish sauce
  • 1 tablespoon Soy sauce
  • 2 stems Green onions
  • 2 Garlic cloves
  • 1 tablespoon Vegetable oil

Instructions:

  1. 1. Heat the vegetable oil in a large pan over medium heat.
  2. 2. Crack the eggs into the pan and scramble until they're mostly cooked, but still slightly runny.
  3. 3. Add the garlic to the pan and stir until it's fragrant. Be careful not to let it burn.
  4. 4. Add the rice to the pan and break it up with the spoon or spatula, making sure everything is mixed well.
  5. 5. Add the soy sauce and fish sauce to the pan and stir until everything is evenly coated.
  6. 6. Stir in the chopped green onions and cook for another minute. The onions should be just wilted, not fully cooked.
  7. 7. Serve the fried rice warm, with extra fish sauce on the side if desired.
