Quick Thai Basil Fried Rice

Ingredients:

  • 4 cups cooked and cooled Jasmine rice
  • 2 tablespoons Vegetable oil
  • 4 minced Garlic cloves
  • 1 sliced Red bell pepper
  • 1 cup frozen Green peas
  • 2 Eggs
  • 2 tablespoons Soy sauce
  • 1 tablespoon Fish sauce
  • 1 tablespoon White sugar
  • 1 cup Thai basil leaves

Instructions:

  1. Heat the oil in a large frying pan or wok over medium-high heat. Add the garlic and stir-fry until golden brown.
  2. Increase the heat to high, then add the rice, bell pepper, and peas. Stir-fry for 5 minutes.
  3. Push the rice to the side of the pan to create a well in the center. Crack the eggs into the well and scramble until mostly cooked.
  4. Stir the eggs into the rice. Add the soy sauce, fish sauce, and sugar. Stir well to combine.
  5. Add the Thai basil leaves and stir-fry for another minute, until the leaves are wilted and fragrant.
  6. Serve hot.
