
Quick Seaside Scramble

Ingredients:
- 1 cup seafood mix (shrimp, squid, scallops)
- 4 large eggs
- 2 tbsp butter
- 3 stalks green onions
- 0.25 cup milk
- to taste salt
- to taste black pepper
Instructions:
- Crack the eggs into a bowl, add milk, whisk together and set aside.
- Heat 1 tablespoon of butter in a non-stick pan over medium heat.
- Add the seafood mix to the pan and cook until they turn opaque.
- While the seafood is cooking, thin slice the green onions.
- Push the seafood to one side of the pan then melt the other tablespoon of butter in the empty side of the pan.
- Once the butter is melted, pour in the egg mixture.
- As the egg begins to set around the edges, use a spatula to gently push the cooked portions towards the center of the pan.
- When the eggs are mostly cooked, mix in the seafood and green onions. Season with salt and pepper.
- Cook for another minute, then serve immediately. Enjoy your quick and easy seaside scramble!
