Quick Seaside Scramble

Ingredients:

  • 1 cup seafood mix (shrimp, squid, scallops)
  • 4 large eggs
  • 2 tbsp butter
  • 3 stalks green onions
  • 0.25 cup milk
  • to taste salt
  • to taste black pepper

Instructions:

  1. Crack the eggs into a bowl, add milk, whisk together and set aside.
  2. Heat 1 tablespoon of butter in a non-stick pan over medium heat.
  3. Add the seafood mix to the pan and cook until they turn opaque.
  4. While the seafood is cooking, thin slice the green onions.
  5. Push the seafood to one side of the pan then melt the other tablespoon of butter in the empty side of the pan.
  6. Once the butter is melted, pour in the egg mixture.
  7. As the egg begins to set around the edges, use a spatula to gently push the cooked portions towards the center of the pan.
  8. When the eggs are mostly cooked, mix in the seafood and green onions. Season with salt and pepper.
  9. Cook for another minute, then serve immediately. Enjoy your quick and easy seaside scramble!
