
Quick Ratatouille on Toast

Ingredients:
- 2 tablespoons Olive oil
- 2 whole, minced Garlic cloves
- 1 whole, diced Onion
- 2 whole, chopped Bell peppers
- 1 whole, chopped Eggplant
- 1 whole, chopped Zucchini
- 2 whole, chopped Tomatoes
- 0.5 teaspoon Salt
- 0.25 teaspoon Pepper
- 1 whole, sliced Avocado
- 4 slices Whole grain bread
- 1 handful, chopped Fresh parsley
Instructions:
- Heat the olive oil in a large pan over medium heat.
- Add the garlic and onions to the pan and sauté until the onions are translucent.
- Add the bell peppers, eggplant, and zucchini to the pan. Stir well and cook for about 5 minutes or until the vegetables are soft.
- Add the tomatoes, salt, and pepper to the pan. Stir well and let the mixture simmer for another 5 minutes.
- In the meantime, toast the bread slices.
- Smooth a layer of hummus onto each slice of toast. Then, top each slice with a generous serving of the ratatouille.
- Garnish with avocado slices and fresh parsley before serving.
