Quick Ratatouille on Toast

Ingredients:

  • 2 tablespoons Olive oil
  • 2 whole, minced Garlic cloves
  • 1 whole, diced Onion
  • 2 whole, chopped Bell peppers
  • 1 whole, chopped Eggplant
  • 1 whole, chopped Zucchini
  • 2 whole, chopped Tomatoes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 1 whole, sliced Avocado
  • 4 slices Whole grain bread
  • 1 handful, chopped Fresh parsley

Instructions:

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the garlic and onions to the pan and sauté until the onions are translucent.
  3. Add the bell peppers, eggplant, and zucchini to the pan. Stir well and cook for about 5 minutes or until the vegetables are soft.
  4. Add the tomatoes, salt, and pepper to the pan. Stir well and let the mixture simmer for another 5 minutes.
  5. In the meantime, toast the bread slices.
  6. Smooth a layer of hummus onto each slice of toast. Then, top each slice with a generous serving of the ratatouille.
  7. Garnish with avocado slices and fresh parsley before serving.
