
Quick Mixed Berry Ratatouille

Ingredients:
- 2 tablespoons olive oil
- 1 whole red onion
- 2 whole garlic cloves
- 1 large eggplant
- 1 large zucchini
- 1 large red bell pepper
- 4 whole tomatoes
- 1 cup mixed berries
- 1/4 cup fresh basil
- to taste salt and pepper
Instructions:
- Heat oil in a large skillet over medium heat. Add onion, cook until soft and brown.
- Add garlic and cook for another minute.
- Add the eggplant, zucchini and bell pepper, cook until they begin to soften.
- Stir in the tomatoes, mixed berries, salt and pepper, then reduce heat to low. Cover the pan and simmer for about 10 minutes.
- Uncover and cook for another 10 minutes, or until all the vegetables are soft and the sauce has thickened.
- Stir in the fresh basil just before serving. Adjust seasoning as needed.
- Serve warm over rice or with a crusty bread.
