Quick Mixed Berry Ratatouille

Ingredients:

  • 2 tablespoons olive oil
  • 1 whole red onion
  • 2 whole garlic cloves
  • 1 large eggplant
  • 1 large zucchini
  • 1 large red bell pepper
  • 4 whole tomatoes
  • 1 cup mixed berries
  • 1/4 cup fresh basil
  • to taste salt and pepper

Instructions:

  1. Heat oil in a large skillet over medium heat. Add onion, cook until soft and brown.
  2. Add garlic and cook for another minute.
  3. Add the eggplant, zucchini and bell pepper, cook until they begin to soften.
  4. Stir in the tomatoes, mixed berries, salt and pepper, then reduce heat to low. Cover the pan and simmer for about 10 minutes.
  5. Uncover and cook for another 10 minutes, or until all the vegetables are soft and the sauce has thickened.
  6. Stir in the fresh basil just before serving. Adjust seasoning as needed.
  7. Serve warm over rice or with a crusty bread.
