Ingredients:

  • 2 cups Cooked Rice
  • 1 can Black Beans
  • 1 can Corn Kernels
  • 1 medium Red Bell Pepper
  • 1 medium Avocado
  • 1 cup Cheddar Cheese
  • 1 bunch Cilantro
  • 2 tbsp Sour Cream
  • to taste Salsa

Instructions:

  1. Prepare the black beans and corn according to can directions.
  2. Dice the red bell pepper and avocado.
  3. In a bowl, mix the cooked rice, black beans, corn kernels, and diced bell pepper.
  4. Top off with cheddar cheese, diced avocado, a dollop of sour cream, salsa, and fresh chopped cilantro.
