Ingredients:
- 2 cups Cooked Rice
- 1 can Black Beans
- 1 can Corn Kernels
- 1 medium Red Bell Pepper
- 1 medium Avocado
- 1 cup Cheddar Cheese
- 1 bunch Cilantro
- 2 tbsp Sour Cream
- to taste Salsa
Instructions:
- Prepare the black beans and corn according to can directions.
- Dice the red bell pepper and avocado.
- In a bowl, mix the cooked rice, black beans, corn kernels, and diced bell pepper.
- Top off with cheddar cheese, diced avocado, a dollop of sour cream, salsa, and fresh chopped cilantro.
