
Quick Mexican Breakfast Quesadillas

Ingredients:
- 4 pieces Flour tortillas
- 1 cup Refried beans
- 1 cup Shredded cheese (Cheddar or Monterey Jack)
- 0.5 cup Pico de gallo or salsa
- 0.5 cup Guacamole
- 0.25 cup Sour cream
- 2 tablespoons Cooking oil
Instructions:
- 1. Spread half of each tortilla with refried beans.
- 2. Sprinkle the cheese over the beans. Fold the tortillas in half to make a half-moon shape.
- 3. Heat one tablespoon of oil in a frying pan over medium heat.
- 4. Cook the quesadillas in the pan until the cheese is melted and the outsides are golden brown, about 2-3 minutes per side. You may need to do this in batches, adding more oil as needed.
- 5. Cut each quesadilla into quarters. Serve hot with the pico de gallo or salsa, guacamole, and sour cream for dipping.
