Quick Mexican Breakfast Quesadillas

Ingredients:

  • 4 pieces Flour tortillas
  • 1 cup Refried beans
  • 1 cup Shredded cheese (Cheddar or Monterey Jack)
  • 0.5 cup Pico de gallo or salsa
  • 0.5 cup Guacamole
  • 0.25 cup Sour cream
  • 2 tablespoons Cooking oil

Instructions:

  1. 1. Spread half of each tortilla with refried beans.
  2. 2. Sprinkle the cheese over the beans. Fold the tortillas in half to make a half-moon shape.
  3. 3. Heat one tablespoon of oil in a frying pan over medium heat.
  4. 4. Cook the quesadillas in the pan until the cheese is melted and the outsides are golden brown, about 2-3 minutes per side. You may need to do this in batches, adding more oil as needed.
  5. 5. Cut each quesadilla into quarters. Serve hot with the pico de gallo or salsa, guacamole, and sour cream for dipping.
