Quick Mediterranean Veggie Wrap

Ingredients:

  • 2 pieces Large whole wheat wrap
  • 4 tablespoons Hummus
  • 2 cups Mixed salad greens
  • 1 piece Tomatoes
  • 1 piece Cucumbers
  • 2 tablespoons Black olives, sliced
  • 2 tablespoons Feta cheese
  • 1 tablespoons Red onion, thinly sliced
  • 1 teaspoon Extra virgin olive oil
  • 1 teaspoon Lemon juice
  • To taste Salt and pepper

Instructions:

  1. Lay out the whole wheat wrap on a clean surface or plate.
  2. Spread 2 tablespoons of hummus on each wrap.
  3. Top each with 1 cup of mixed salad greens.
  4. Dice the tomato and cucumber and divide them evenly between the two wraps.
  5. Top each with 1 tablespoon of sliced black olives and 1 tablespoon of feta cheese.
  6. Add thin slices of red onion to each wrap.
  7. In a small bowl, combine the olive oil and lemon juice. Drizzle this dressing over the veggies on each wrap.
  8. Season to taste with salt and pepper.
  9. Fold the wraps, tucking in the sides to prevent the filling from falling out.
  10. Enjoy immediately or refrigerate for up to 2 hours before eating.
