
Quick Mediterranean Veggie Wrap

Ingredients:
- 2 pieces Large whole wheat wrap
- 4 tablespoons Hummus
- 2 cups Mixed salad greens
- 1 piece Tomatoes
- 1 piece Cucumbers
- 2 tablespoons Black olives, sliced
- 2 tablespoons Feta cheese
- 1 tablespoons Red onion, thinly sliced
- 1 teaspoon Extra virgin olive oil
- 1 teaspoon Lemon juice
- To taste Salt and pepper
Instructions:
- Lay out the whole wheat wrap on a clean surface or plate.
- Spread 2 tablespoons of hummus on each wrap.
- Top each with 1 cup of mixed salad greens.
- Dice the tomato and cucumber and divide them evenly between the two wraps.
- Top each with 1 tablespoon of sliced black olives and 1 tablespoon of feta cheese.
- Add thin slices of red onion to each wrap.
- In a small bowl, combine the olive oil and lemon juice. Drizzle this dressing over the veggies on each wrap.
- Season to taste with salt and pepper.
- Fold the wraps, tucking in the sides to prevent the filling from falling out.
- Enjoy immediately or refrigerate for up to 2 hours before eating.
