Quick Mediterranean Vegetable Pasta

Ingredients:

  • 400 grams Pasta
  • 2 tablespoons Extra virgin olive oil
  • 3 cloves Garlic
  • 200 grams Cherry tomatoes
  • 2 medium size Zucchini
  • 50 grams Black olives
  • 100 grams Feta cheese
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Cook the pasta in a large pot of boiling salted water according to the package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the garlic and saute for a minute until fragrant.
  3. Add the cherry tomatoes and zucchini to the pan and saute for a few minutes until the vegetables are starting to soften.
  4. Drain the pasta, reserving some of the pasta water. Add the pasta to the pan with the vegetables. Mix well, adding some of the reserved pasta water if needed.
  5. Add the black olives and feta cheese to the pasta and mix again. Season with salt and pepper to taste.
  6. Serve the pasta hot, garnished with a little more feta cheese if desired. Enjoy your quick and easy Mediterranean vegetable pasta!
