
Quick Mediterranean Vegetable Pasta

Ingredients:
- 400 grams Pasta
- 2 tablespoons Extra virgin olive oil
- 3 cloves Garlic
- 200 grams Cherry tomatoes
- 2 medium size Zucchini
- 50 grams Black olives
- 100 grams Feta cheese
- to taste Salt
- to taste Pepper
Instructions:
- Cook the pasta in a large pot of boiling salted water according to the package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the garlic and saute for a minute until fragrant.
- Add the cherry tomatoes and zucchini to the pan and saute for a few minutes until the vegetables are starting to soften.
- Drain the pasta, reserving some of the pasta water. Add the pasta to the pan with the vegetables. Mix well, adding some of the reserved pasta water if needed.
- Add the black olives and feta cheese to the pasta and mix again. Season with salt and pepper to taste.
- Serve the pasta hot, garnished with a little more feta cheese if desired. Enjoy your quick and easy Mediterranean vegetable pasta!
