
Quick Mediterranean Shrimp Pasta

Ingredients:
- 2 cups Pasta
- 2 tbsp Olive oil
- 2 Garlic cloves
- 1 lb Large shrimp
- 1 cup Cherry tomatoes
- 0.5 cup Dry white wine
- 0.25 cup Fresh basil
- 1 tbsp Lemon zest
- to taste Salt and pepper
- 0.5 cup Feta cheese
Instructions:
- Cook the pasta according to package instructions.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add garlic and cook until fragrant.
- Add the shrimp to the skillet. Season with salt and pepper. Cook until the shrimp is pink, about 2-3 minutes per side.
- Remove the shrimp from the skillet and set aside. In the same skillet, add the cherry tomatoes and cook until they start to burst.
- Add the wine to the skillet and let it simmer until reduced by half.
- Add the cooked pasta, fresh basil, lemon zest, and cooked shrimp back into the skillet. Stir to combine.
- Sprinkle with feta cheese before serving.
