Quick Mediterranean Shrimp Pasta

Ingredients:

  • 2 cups Pasta
  • 2 tbsp Olive oil
  • 2 Garlic cloves
  • 1 lb Large shrimp
  • 1 cup Cherry tomatoes
  • 0.5 cup Dry white wine
  • 0.25 cup Fresh basil
  • 1 tbsp Lemon zest
  • to taste Salt and pepper
  • 0.5 cup Feta cheese

Instructions:

  1. Cook the pasta according to package instructions.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add garlic and cook until fragrant.
  3. Add the shrimp to the skillet. Season with salt and pepper. Cook until the shrimp is pink, about 2-3 minutes per side.
  4. Remove the shrimp from the skillet and set aside. In the same skillet, add the cherry tomatoes and cook until they start to burst.
  5. Add the wine to the skillet and let it simmer until reduced by half.
  6. Add the cooked pasta, fresh basil, lemon zest, and cooked shrimp back into the skillet. Stir to combine.
  7. Sprinkle with feta cheese before serving.
