Ingredients:
- 2 cups Cooked rice
- 1 cup Cherry tomatoes
- 1 cup, chopped Cucumber
- 1 small Red onion
- 1/2 cup, crumbled Feta cheese
- 1 juiced Lemon
- 2 tablespoons Olive oil
- 2 tablespoons, chopped Fresh dill
- to taste Salt
- to taste Black pepper
Instructions:
- 1. In a large bowl, combine cooked rice, cherry tomatoes, chopped cucumber, diced red onion, and crumbled feta cheese.
- 2. In a small bowl, whisk together the juice of one lemon, olive oil, fresh dill, salt and pepper.
- 3. Pour the dressing over the rice salad and toss to ensure everything is well coated.
- 4. Serve the salad immediately, or refrigerate for up to 2 hours before serving.
