Quick Mediterranean Rice Salad

Ingredients:

  • 2 cups Cooked rice
  • 1 cup Cherry tomatoes
  • 1 cup, chopped Cucumber
  • 1 small Red onion
  • 1/2 cup, crumbled Feta cheese
  • 1 juiced Lemon
  • 2 tablespoons Olive oil
  • 2 tablespoons, chopped Fresh dill
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. 1. In a large bowl, combine cooked rice, cherry tomatoes, chopped cucumber, diced red onion, and crumbled feta cheese.
  2. 2. In a small bowl, whisk together the juice of one lemon, olive oil, fresh dill, salt and pepper.
  3. 3. Pour the dressing over the rice salad and toss to ensure everything is well coated.
  4. 4. Serve the salad immediately, or refrigerate for up to 2 hours before serving.
