
Quick Mediterranean Chicken Pita Pockets

Ingredients:
- 1 lb Boneless, skinless chicken breasts
- 2 tbsp Olive oil
- 2 Garlic clove
- 1 tsp Zatar seasoning
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- 4 slices Pita bread
- 1 cup Humus
- 2 whole Sliced tomatoes
- 1 whole Sliced cucumbers
- 1 whole Sliced onions
Instructions:
- 1. In a large skillet, heat the olive oil over medium heat.
- 2. While the oil heats, season the chicken breasts with zatar seasoning, salt, and pepper.
- 3. Add the garlic cloves to the skillet and sauté for about a minute until fragrant.
- 4. Add the chicken to the skillet and cook each side for 7-8 minutes until fully cooked and golden brown.
- 5. Meanwhile, heat up the pita bread in an oven or toaster oven until warm.
- 6. Spread humus on each pita, then add the cooked chicken, followed by the sliced tomatoes, cucumbers, and onions.
- 7. Fold the pita to form a pocket and enjoy.
