Quick Mediterranean Chicken Pita Pockets

Ingredients:

  • 1 lb Boneless, skinless chicken breasts
  • 2 tbsp Olive oil
  • 2 Garlic clove
  • 1 tsp Zatar seasoning
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 4 slices Pita bread
  • 1 cup Humus
  • 2 whole Sliced tomatoes
  • 1 whole Sliced cucumbers
  • 1 whole Sliced onions

Instructions:

  1. 1. In a large skillet, heat the olive oil over medium heat.
  2. 2. While the oil heats, season the chicken breasts with zatar seasoning, salt, and pepper.
  3. 3. Add the garlic cloves to the skillet and sauté for about a minute until fragrant.
  4. 4. Add the chicken to the skillet and cook each side for 7-8 minutes until fully cooked and golden brown.
  5. 5. Meanwhile, heat up the pita bread in an oven or toaster oven until warm.
  6. 6. Spread humus on each pita, then add the cooked chicken, followed by the sliced tomatoes, cucumbers, and onions.
  7. 7. Fold the pita to form a pocket and enjoy.
