
Quick Mediterranean Breakfast Skillet

Ingredients:
- 2 tablespoons extra virgin olive oil
- 1 cup diced red bell pepper
- 1 cup sliced zucchini
- 2 cloves garlic
- 4 eggs
- 1/3 cup feta cheese crumbles
- 1 cup diced tomatoes
- to taste chopped fresh basil
- to taste ground black pepper
- to taste salt
Instructions:
- Heat the olive oil in a large non-stick skillet over medium heat.
- Add the diced red bell pepper and sliced zucchini to the skillet and sauté until they begin to soften, about 5 minutes.
- Add the garlic to the skillet and continue to sauté for another minute.
- Crack the eggs directly into the skillet on top of the vegetables. Cover the skillet and let the eggs cook until they are done to your preference, about 3-5 minutes for runny yolks.
- Sprinkle the feta cheese crumbles, diced tomatoes, and fresh basil over the top of the eggs. Cover the skillet again and let it cook until the cheese is slightly melted, about 1-2 minutes.
- Season the skillet with salt and black pepper to taste.
- Serve the breakfast skillet directly from the pan.
