
Quick Mediterranean Breakfast Shrimp Scramble

Ingredients:
- 2 teaspoon olive oil
- 2 cloves garlic
- 1 cup diced tomatoes
- 200 grams cooked shrimp
- 2 cup spinach
- 4 eggs
- 50 grams feta cheese
- 1 pinch salt
- 1 pinch pepper
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic and cook until fragrant, about 1 minute.
- Add the diced tomatoes and shrimp. Cook for 2-3 minutes.
- Add the spinach and cook until wilted.
- In a separate bowl, whisk the eggs and pour them into the skillet. Stir gently to combine.
- Cook until the eggs are set, about 4-5 minutes.
- Sprinkle the feta cheese on top, season with salt and pepper.
- Serve immediately, with a piece of crusty bread if desired.
