Quick Mediterranean Breakfast Shrimp Scramble

Ingredients:

  • 2 teaspoon olive oil
  • 2 cloves garlic
  • 1 cup diced tomatoes
  • 200 grams cooked shrimp
  • 2 cup spinach
  • 4 eggs
  • 50 grams feta cheese
  • 1 pinch salt
  • 1 pinch pepper

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the garlic and cook until fragrant, about 1 minute.
  3. Add the diced tomatoes and shrimp. Cook for 2-3 minutes.
  4. Add the spinach and cook until wilted.
  5. In a separate bowl, whisk the eggs and pour them into the skillet. Stir gently to combine.
  6. Cook until the eggs are set, about 4-5 minutes.
  7. Sprinkle the feta cheese on top, season with salt and pepper.
  8. Serve immediately, with a piece of crusty bread if desired.
