
Quick Mango Chicken Curry

Ingredients:
- 2 tablespoons oil
- 4 pieces chicken breasts
- 1 large onion
- 2 pieces garlic cloves
- 2 tablespoons curry powder
- 1 teaspoon salt
- 1 large mango
- 1 cup coconut milk
- to taste fresh coriander
Instructions:
- Heat the oil in a large pan over medium heat, add chicken pieces and cook until lightly browned.
- Remove the chicken and set aside. In the same pan, add the chopped onion, minced garlic, curry powder, and salt. Cook over medium heat until onion is translucent.
- Peel and dice the mango. Add it to the pan along with the browned chicken and coconut milk. Stir well and let it simmer for about 15 minutes, or until the chicken is cooked through and the flavors are well combined.
- Adjust the salt if needed, garnish with freshly chopped coriander leaves. Serve the curry hot with basmati rice or naan bread.
