Quick Italian Egg Scramble

Ingredients:

  • 8 units Eggs
  • 1 cup Cherry Tomatoes
  • handful Fresh Basil leaves
  • 1 cup Mozzarella Cheese
  • 1 clove Garlic
  • 1 tablespoon Olive Oil
  • to taste Salt and Pepper

Instructions:

  1. Beat the eggs in a medium bowl and season with salt and pepper.
  2. Heat the olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the tomatoes to the pan and cook for 1-2 minutes, until slightly softened.
  4. Pour the beaten eggs into the pan and let it sit for a few seconds until it starts to set around the edges.
  5. Stir the eggs, lifting and folding it over from the bottom of the pan.
  6. Just before the eggs are fully cooked, sprinkle in the mozzarella cheese and fresh basil leaves.
  7. Continue to cook for another minute, until the cheese has melted and the eggs are cooked to your desired doneness.
  8. Serve warm with a piece of crusty bread if desired.
