
Quick Italian Egg Scramble

Ingredients:
- 8 units Eggs
- 1 cup Cherry Tomatoes
- handful Fresh Basil leaves
- 1 cup Mozzarella Cheese
- 1 clove Garlic
- 1 tablespoon Olive Oil
- to taste Salt and Pepper
Instructions:
- Beat the eggs in a medium bowl and season with salt and pepper.
- Heat the olive oil in a pan over medium heat. Add the minced garlic and sauté until fragrant.
- Add the tomatoes to the pan and cook for 1-2 minutes, until slightly softened.
- Pour the beaten eggs into the pan and let it sit for a few seconds until it starts to set around the edges.
- Stir the eggs, lifting and folding it over from the bottom of the pan.
- Just before the eggs are fully cooked, sprinkle in the mozzarella cheese and fresh basil leaves.
- Continue to cook for another minute, until the cheese has melted and the eggs are cooked to your desired doneness.
- Serve warm with a piece of crusty bread if desired.
