Quick Italian Breakfast Pasta

Ingredients:

  • 200 grams Spaghetti Pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • to taste Red pepper flakes
  • 2 Eggs
  • 50 grams Parmesan cheese
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. Boil a pot of water with salt and cook the spaghetti until al dente.
  2. While the spaghetti is cooking, heat the olive oil in a pan over medium heat.
  3. Add the finely chopped garlic and red pepper flakes to the pan and sauté until the garlic is golden.
  4. In a separate bowl, whisk the eggs and mix in the grated parmesan cheese.
  5. When the spaghetti is cooked, save a cup of pasta water and drain the rest. Add the cooked spaghetti to the pan with garlic and pepper flakes.
  6. Remove the pan from the heat and quickly add the egg and cheese mixture to the pasta, stirring quickly to ensure the eggs don't scramble. If the pasta seems too dry, add some of the reserved pasta water.
  7. Season with more salt and pepper if needed. Serve immediately with a sprinkle of additional Parmesan. Enjoy your quick Italian breakfast pasta!
