Quick Italian Breakfast Frittata

Ingredients:

  • 6 pcs Eggs
  • 2 tbsp Olive oil
  • 2 cloves Garlic
  • 1 cup Mini tomatoes
  • 1/2 cup Mozzarella cheese
  • 1 handful Fresh basil leaves
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, beat the eggs and set aside.
  3. On a stovetop, heat olive oil in an ovenproof skillet. Add the minced garlic and sauté until fragrant.
  4. Add the mini tomatoes to the skillet and cook until they are soft.
  5. Pour the beaten eggs over the tomatoes in the skillet.
  6. Sprinkle mozzarella cheese evenly over the eggs and tomatoes.
  7. Season with salt and black pepper to taste.
  8. Carefully transfer the skillet into the preheated oven.
  9. Bake for about 10 minutes, or until the eggs are set and the cheese is bubbly.
  10. Garnish with fresh basil leaves before serving.
