Quick Indian Shrimp Curry

Ingredients:

  • 1 pound Shrimp
  • 2 tablespoons Vegetable oil
  • 1 large Onion
  • 2 Garlic cloves
  • 1 inch piece Ginger
  • 2 teaspoons Curry powder
  • 2 large Tomatoes
  • 1 can Coconut milk
  • Handful Fresh coriander

Instructions:

  1. Peel and devein the shrimp, keeping the tails intact. Rinse and pat dry.
  2. Heat the oil in a large skillet over medium heat. Slice the onion and fry until soft.
  3. Crush the garlic and grate the ginger, then add to the skillet along with the curry powder. Fry for another minute.
  4. Dice the tomatoes and add to the skillet. Cook for 5 minutes until they start to break down.
  5. Add the coconut milk and bring to a simmer. Then add the shrimp and cook until pink, about 3-4 minutes.
  6. Serve the curry over rice, garnished with the fresh coriander. Enjoy your delicious and quick Indian shrimp curry!
