
Quick Indian Shrimp Curry

Ingredients:
- 1 pound Shrimp
- 2 tablespoons Vegetable oil
- 1 large Onion
- 2 Garlic cloves
- 1 inch piece Ginger
- 2 teaspoons Curry powder
- 2 large Tomatoes
- 1 can Coconut milk
- Handful Fresh coriander
Instructions:
- Peel and devein the shrimp, keeping the tails intact. Rinse and pat dry.
- Heat the oil in a large skillet over medium heat. Slice the onion and fry until soft.
- Crush the garlic and grate the ginger, then add to the skillet along with the curry powder. Fry for another minute.
- Dice the tomatoes and add to the skillet. Cook for 5 minutes until they start to break down.
- Add the coconut milk and bring to a simmer. Then add the shrimp and cook until pink, about 3-4 minutes.
- Serve the curry over rice, garnished with the fresh coriander. Enjoy your delicious and quick Indian shrimp curry!
