
Quick Indian Pasta

Ingredients:
- 500 grams Pasta
- 2 tbsp Olive oil
- 2 medium Onions (chopped)
- 1 tbsp Curry powder
- 2 cloves Garlic (minced)
- 1 cup Tomatoes (diced)
- 1 cup Frozen peas
- 1 cup Coconut milk
- 1 tsp Salt
- 1/2 tsp Black Pepper
Instructions:
- Boil the pasta in salted water until al dente. Drain and set aside.
- While pasta is cooking, heat the olive oil in a large pan over medium heat.
- Add the onions and cook until they are soft and translucent.
- Add the curry powder and minced garlic, stir for a minute until the spices release their aroma.
- Add the diced tomatoes and peas. Continue cooking for about 2 minutes.
- Add the coconut milk, salt, and pepper. Stir for around 1 minute until the mixture is well combined.
- Reduce the heat to low and add the cooked pasta to the pan. Toss everything together until the pasta is well coated with the sauce.
- Serve warm with a sprinkle of fresh cilantro on top if desired.
