Quick Indian Pasta

Ingredients:

  • 500 grams Pasta
  • 2 tbsp Olive oil
  • 2 medium Onions (chopped)
  • 1 tbsp Curry powder
  • 2 cloves Garlic (minced)
  • 1 cup Tomatoes (diced)
  • 1 cup Frozen peas
  • 1 cup Coconut milk
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions:

  1. Boil the pasta in salted water until al dente. Drain and set aside.
  2. While pasta is cooking, heat the olive oil in a large pan over medium heat.
  3. Add the onions and cook until they are soft and translucent.
  4. Add the curry powder and minced garlic, stir for a minute until the spices release their aroma.
  5. Add the diced tomatoes and peas. Continue cooking for about 2 minutes.
  6. Add the coconut milk, salt, and pepper. Stir for around 1 minute until the mixture is well combined.
  7. Reduce the heat to low and add the cooked pasta to the pan. Toss everything together until the pasta is well coated with the sauce.
  8. Serve warm with a sprinkle of fresh cilantro on top if desired.
