
Quick Indian Mango Curry

Ingredients:
- 2 whole Ripe Mangoes
- 1 cup Coconut milk
- 10 leaves Curry leaves
- 1 teaspoon Mustard seeds
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Cumin powder
- 1 tablespoon Ghee or vegetable oil
- to taste Salt
Instructions:
- 1. Peel the mangoes and cut them into small pieces.
- 2. Heat the ghee or oil in a pan, add mustard seeds and curry leaves.
- 3. Once the mustard seeds start to crackle, add turmeric and cumin powder. Stir for a minute.
- 4. Add the chopped mangoes to the pan and mix well. Cook for about 5 minutes or until the mangoes are soft.
- 5. Pour in the coconut milk and add salt according to your taste. Simmer for about 10-15 minutes.
- 6. Serve the Quick Indian Mango Curry over a bed of rice or with naan bread.
