Quick Indian Mango Curry

Ingredients:

  • 2 whole Ripe Mangoes
  • 1 cup Coconut milk
  • 10 leaves Curry leaves
  • 1 teaspoon Mustard seeds
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 tablespoon Ghee or vegetable oil
  • to taste Salt

Instructions:

  1. 1. Peel the mangoes and cut them into small pieces.
  2. 2. Heat the ghee or oil in a pan, add mustard seeds and curry leaves.
  3. 3. Once the mustard seeds start to crackle, add turmeric and cumin powder. Stir for a minute.
  4. 4. Add the chopped mangoes to the pan and mix well. Cook for about 5 minutes or until the mangoes are soft.
  5. 5. Pour in the coconut milk and add salt according to your taste. Simmer for about 10-15 minutes.
  6. 6. Serve the Quick Indian Mango Curry over a bed of rice or with naan bread.
