
Quick French Pork Loin

Ingredients:
- 1 kg Pork loin
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 4 Garlic cloves
- 2 tablespoons Dijon mustard
- 1 cup White wine
- 2 tablespoons Butter
- 1 teaspoon Thyme
Instructions:
- Preheat your oven to 400 degrees F (200 degrees C).
- Rub the pork loin with salt, pepper and minced garlic.
- In a large oven-safe pan, melt the butter over medium-high heat. Then sear the pork loin on all sides until it's browned.
- Spread the Dijon mustard evenly over the top of the pork, and then pour the wine into the pan, not over the pork.
- Place the pan in the oven and cook for about 20 minutes, or until the pork reaches an internal temperature of 145 degrees F (63 degrees C).
- Remove from the oven and let rest for a few minutes before slicing. The pork will continue to cook as it rests.
- Strain the juice from the pan and pour over the sliced pork, garnish with thyme and serve.
