Quick French Pork Loin

Ingredients:

  • 1 kg Pork loin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 Garlic cloves
  • 2 tablespoons Dijon mustard
  • 1 cup White wine
  • 2 tablespoons Butter
  • 1 teaspoon Thyme

Instructions:

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Rub the pork loin with salt, pepper and minced garlic.
  3. In a large oven-safe pan, melt the butter over medium-high heat. Then sear the pork loin on all sides until it's browned.
  4. Spread the Dijon mustard evenly over the top of the pork, and then pour the wine into the pan, not over the pork.
  5. Place the pan in the oven and cook for about 20 minutes, or until the pork reaches an internal temperature of 145 degrees F (63 degrees C).
  6. Remove from the oven and let rest for a few minutes before slicing. The pork will continue to cook as it rests.
  7. Strain the juice from the pan and pour over the sliced pork, garnish with thyme and serve.
