
Quick French Coq au Vin

Ingredients:
- 2 tablespoons Olive oil
- 4 pieces Bone-in, skin-on chicken thighs
- to taste Salt
- to taste Black pepper
- 3 cloves Garlic cloves
- 2 pieces Small onions
- 1 cup Cup red wine
- 1 cup Chicken broth
- 1 sprig Sprig of thyme
- 2 strips Bacon strips
- 1 cup Button mushrooms
Instructions:
- Heat the olive oil in a large skillet over medium-high heat.
- Season the chicken thighs with salt and pepper.
- Add the chicken thighs to the skillet and cook until browned on both sides.
- Remove the chicken thighs from the skillet and set aside.
- In the same skillet, add the garlic, onions, and bacon strips. Cook until the onions are translucent and the bacon is crispy.
- Add the mushrooms to the skillet and cook until they have browned.
- Pour the red wine and chicken broth into the skillet. Stir well, scraping any browned bits off the bottom of the pan.
- Add the sprig of thyme and return the chicken thighs to the skillet.
- Cover the skillet and let it simmer for 20-25 minutes, until the chicken is cooked through.
- Serve the Coq au Vin hot with some bread for dipping.
