Quick French Coq au Vin

Ingredients:

  • 2 tablespoons Olive oil
  • 4 pieces Bone-in, skin-on chicken thighs
  • to taste Salt
  • to taste Black pepper
  • 3 cloves Garlic cloves
  • 2 pieces Small onions
  • 1 cup Cup red wine
  • 1 cup Chicken broth
  • 1 sprig Sprig of thyme
  • 2 strips Bacon strips
  • 1 cup Button mushrooms

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken thighs with salt and pepper.
  3. Add the chicken thighs to the skillet and cook until browned on both sides.
  4. Remove the chicken thighs from the skillet and set aside.
  5. In the same skillet, add the garlic, onions, and bacon strips. Cook until the onions are translucent and the bacon is crispy.
  6. Add the mushrooms to the skillet and cook until they have browned.
  7. Pour the red wine and chicken broth into the skillet. Stir well, scraping any browned bits off the bottom of the pan.
  8. Add the sprig of thyme and return the chicken thighs to the skillet.
  9. Cover the skillet and let it simmer for 20-25 minutes, until the chicken is cooked through.
  10. Serve the Coq au Vin hot with some bread for dipping.
