Quick French Breakfast Rice Pudding

Ingredients:

  • 1 cup Long Grain Rice
  • 2 cups Whole Milk
  • 0.5 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Butter
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Ground Cinnamon
  • 1 cup Fresh Berries

Instructions:

  1. In a medium saucepan, bring 2 cups of water to a boil. Add rice and pinch of salt, then reduce heat to low, cover, and let it simmer for 20 minutes.
  2. In another saucepan, combine milk, sugar, butter, and vanilla extract. Bring to a low simmer, stirring constantly until the sugar is fully dissolved.
  3. When the rice is done, add it to the milk mixture and stir well. Let it simmer on low heat for another 5-10 minutes, until it reaches a creamy consistency.
  4. While the rice pudding is cooking, wash and prepare fresh berries.
  5. Serve the rice pudding hot, topped with fresh berries and a sprinkle of ground cinnamon. Enjoy your quick French breakfast!
