Quick & Easy Veggie Tacos

Ingredients:

  • 8 pieces corn tortillas
  • 2 whole bell peppers
  • 1 whole onion
  • 2 cloves garlic cloves
  • 1 whole zucchini
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 1 teaspoon cumin
  • 1 whole avocado
  • as needed salsa
  • as needed cilantro
  • for serving lime wedges

Instructions:

  1. 1. Thinly slice the bell peppers and onion. Mince the garlic. Cut the zucchini into thin slices or dice it.
  2. 2. Heat the olive oil in a large pan over medium-high heat. Add the bell peppers and onion to the pan and sauté until they start to soften, about 5 minutes.
  3. 3. Add the garlic, zucchini, salt, pepper, and cumin to the pan. Continue to sauté until all the vegetables are tender, about 5 more minutes.
  4. 4. While the vegetables are cooking, warm the tortillas in a dry pan over medium heat.
  5. 5. Slice the avocado. When the veggies are done, assemble the tacos. Top each tortilla with a scoop of veggies, a few slices of avocado, a spoonful of salsa, and a sprinkle of cilantro.
  6. 6. Serve the tacos with a lime wedge for squeezing on top. Enjoy your quick and easy veggie taco!
