
Quick & Easy Veggie Tacos

Ingredients:
- 8 pieces corn tortillas
- 2 whole bell peppers
- 1 whole onion
- 2 cloves garlic cloves
- 1 whole zucchini
- 2 tablespoons olive oil
- to taste salt
- to taste pepper
- 1 teaspoon cumin
- 1 whole avocado
- as needed salsa
- as needed cilantro
- for serving lime wedges
Instructions:
- 1. Thinly slice the bell peppers and onion. Mince the garlic. Cut the zucchini into thin slices or dice it.
- 2. Heat the olive oil in a large pan over medium-high heat. Add the bell peppers and onion to the pan and sauté until they start to soften, about 5 minutes.
- 3. Add the garlic, zucchini, salt, pepper, and cumin to the pan. Continue to sauté until all the vegetables are tender, about 5 more minutes.
- 4. While the vegetables are cooking, warm the tortillas in a dry pan over medium heat.
- 5. Slice the avocado. When the veggies are done, assemble the tacos. Top each tortilla with a scoop of veggies, a few slices of avocado, a spoonful of salsa, and a sprinkle of cilantro.
- 6. Serve the tacos with a lime wedge for squeezing on top. Enjoy your quick and easy veggie taco!
