Quick & Easy Veggie Quesadillas

Ingredients:

  • 2 tbsp Vegetable oil
  • 1 large Onion
  • 2 large Bell peppers
  • 2 pieces Garlic cloves
  • 2 cups Spinach
  • 8 pieces Flour tortillas
  • 2 cups Cheddar cheese
  • to taste Salt
  • to taste Pepper

Instructions:

  1. 1. Preheat your pan over medium heat and add vegetable oil.
  2. 2. Chop the onion and bell peppers. Crush and mince the garlic cloves.
  3. 3. Saute the onion, bell peppers, and garlic for 4-5 minutes or until they are softened.
  4. 4. Add the spinach to the pan and cook until it's wilted.
  5. 5. Season the mixture with salt and pepper to taste.
  6. 6. Place one tortilla in the pan, sprinkle some cheddar cheese on top, then the veggie mixture, more cheddar cheese, and finally top it with another tortilla.
  7. 7. Cook for 2-3 minutes or until the tortilla is golden and the cheese is melted. Flip and cook the other side.
  8. 8. Remove from the pan and repeat with the remaining tortillas and veggie-cheese mixture.
  9. 9. Cut the quesadillas into quarters and serve warm.
