
Quick & Easy Veggie Quesadillas

Ingredients:
- 2 tbsp Vegetable oil
- 1 large Onion
- 2 large Bell peppers
- 2 pieces Garlic cloves
- 2 cups Spinach
- 8 pieces Flour tortillas
- 2 cups Cheddar cheese
- to taste Salt
- to taste Pepper
Instructions:
- 1. Preheat your pan over medium heat and add vegetable oil.
- 2. Chop the onion and bell peppers. Crush and mince the garlic cloves.
- 3. Saute the onion, bell peppers, and garlic for 4-5 minutes or until they are softened.
- 4. Add the spinach to the pan and cook until it's wilted.
- 5. Season the mixture with salt and pepper to taste.
- 6. Place one tortilla in the pan, sprinkle some cheddar cheese on top, then the veggie mixture, more cheddar cheese, and finally top it with another tortilla.
- 7. Cook for 2-3 minutes or until the tortilla is golden and the cheese is melted. Flip and cook the other side.
- 8. Remove from the pan and repeat with the remaining tortillas and veggie-cheese mixture.
- 9. Cut the quesadillas into quarters and serve warm.
