
Quick & Easy Vegetarian Tacos

Ingredients:
- 2 tablespoons Olive oil
- 1 cup Onion, chopped
- 2 cups Assorted bell peppers, chopped
- 3 cloves Garlic cloves, minced
- 1 packet Taco seasoning
- 1 can Black beans
- 12 shells Taco shells
- 2 cups Lettuce, shredded
- 1 cup Cheese, shredded
- 1 avocado Avocado, sliced
Instructions:
- Heat oil in a large skillet over medium-high heat.
- Add onion and bell peppers to the skillet and sauté until they begin to soften, about 5 minutes.
- Add garlic and taco seasoning, stir well to combine.
- Drain and rinse the black beans, then add to the skillet. Stir until everything is well coated in seasoning.
- Cook for another 5 minutes or until everything is cooked through and warm.
- Warm the taco shells in the oven or microwave as per package instructions.
- Fill each taco shell with the vegetable-bean mixture, then top with lettuce, cheese, and avocado slices.
- Serve immediately and enjoy your quick and easy vegetarian tacos!
