Quick & Easy Vegetarian Tacos

Ingredients:

  • 2 tablespoons Olive oil
  • 1 cup Onion, chopped
  • 2 cups Assorted bell peppers, chopped
  • 3 cloves Garlic cloves, minced
  • 1 packet Taco seasoning
  • 1 can Black beans
  • 12 shells Taco shells
  • 2 cups Lettuce, shredded
  • 1 cup Cheese, shredded
  • 1 avocado Avocado, sliced

Instructions:

  1. Heat oil in a large skillet over medium-high heat.
  2. Add onion and bell peppers to the skillet and sauté until they begin to soften, about 5 minutes.
  3. Add garlic and taco seasoning, stir well to combine.
  4. Drain and rinse the black beans, then add to the skillet. Stir until everything is well coated in seasoning.
  5. Cook for another 5 minutes or until everything is cooked through and warm.
  6. Warm the taco shells in the oven or microwave as per package instructions.
  7. Fill each taco shell with the vegetable-bean mixture, then top with lettuce, cheese, and avocado slices.
  8. Serve immediately and enjoy your quick and easy vegetarian tacos!
