
Quick & Easy Vegetable Temaki Sushi

Ingredients:
- 2 cups Sushi rice
- 2 cups Water
- 2 tbsp Rice vinegar
- 1 tbsp Sugar
- 1 tsp Salt
- 10 pieces Nori sheets
- 1 large piece Carrot
- 1 large piece Cucumber
- 1 piece Avocado
- to taste Soy sauce
- to taste Wasabi paste
- to taste Pickled ginger
Instructions:
- Rinse the sushi rice under cold water until the water runs clear. Add rice and water to a rice cooker and cook according to the manufacturer's instructions.
- While the rice is cooking, mix together the rice vinegar, sugar, and salt in a small saucepan over medium heat. Stir until the sugar and salt have dissolved. Once the rice is done, gently fold in the vinegar mixture and let it cool.
- Cut the carrot and cucumber into thin strips. Slice the avocado.
- To assemble the temaki sushi, lay a nori sheet on a flat surface. Spread a thin layer of sushi rice on one corner of the nori sheet. Place a few pieces of carrot, cucumber, and avocado on top of the rice. Roll the sushi into a cone shape, starting from the rice-covered corner.
- Repeat with the remaining ingredients. Serve with soy sauce, wasabi paste, and pickled ginger to taste.
