Quick & Easy Vegetable Temaki Sushi

Ingredients:

  • 2 cups Sushi rice
  • 2 cups Water
  • 2 tbsp Rice vinegar
  • 1 tbsp Sugar
  • 1 tsp Salt
  • 10 pieces Nori sheets
  • 1 large piece Carrot
  • 1 large piece Cucumber
  • 1 piece Avocado
  • to taste Soy sauce
  • to taste Wasabi paste
  • to taste Pickled ginger

Instructions:

  1. Rinse the sushi rice under cold water until the water runs clear. Add rice and water to a rice cooker and cook according to the manufacturer's instructions.
  2. While the rice is cooking, mix together the rice vinegar, sugar, and salt in a small saucepan over medium heat. Stir until the sugar and salt have dissolved. Once the rice is done, gently fold in the vinegar mixture and let it cool.
  3. Cut the carrot and cucumber into thin strips. Slice the avocado.
  4. To assemble the temaki sushi, lay a nori sheet on a flat surface. Spread a thin layer of sushi rice on one corner of the nori sheet. Place a few pieces of carrot, cucumber, and avocado on top of the rice. Roll the sushi into a cone shape, starting from the rice-covered corner.
  5. Repeat with the remaining ingredients. Serve with soy sauce, wasabi paste, and pickled ginger to taste.
