Quick & Easy Vegetable Tacos

Ingredients:

  • 6 pieces tortillas
  • 2 whole bell peppers
  • 1 whole onion
  • 2 cloves garlic
  • 12 pieces cherry tomatoes
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup grated cheese
  • to taste salsa

Instructions:

  1. Chop the bell peppers, onion, garlic, and cherry tomatoes into small chunks.
  2. Heat the olive oil in a pan over medium heat, then add the vegetables and sauté for 5-7 mins until tender.
  3. Season with salt and black pepper, and stir well.
  4. Warm the tortillas in a dry pan or directly over the gas flame for a few seconds on each side.
  5. Spoon the vegetables onto each tortilla, then top with grated cheese and salsa. Serve immediately.
