
Quick & Easy Vegetable Tacos

Ingredients:
- 6 pieces tortillas
- 2 whole bell peppers
- 1 whole onion
- 2 cloves garlic
- 12 pieces cherry tomatoes
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.5 cup grated cheese
- to taste salsa
Instructions:
- Chop the bell peppers, onion, garlic, and cherry tomatoes into small chunks.
- Heat the olive oil in a pan over medium heat, then add the vegetables and sauté for 5-7 mins until tender.
- Season with salt and black pepper, and stir well.
- Warm the tortillas in a dry pan or directly over the gas flame for a few seconds on each side.
- Spoon the vegetables onto each tortilla, then top with grated cheese and salsa. Serve immediately.
