Quick & Easy Vegetable Stir-fry

Ingredients:

  • 2 tbsp Olive oil
  • 2 cup Bell peppers
  • 1 cup Snow peas
  • 1 cup Carrots
  • 1 cup Broccoli
  • 2 cloves Garlic
  • 1/4 cup Soy sauce
  • 1 tbsp Cornstarch
  • 1 tbsp Water
  • 3 cups Cooked rice

Instructions:

  1. Prepare the vegetables by cutting them into bite-sized pieces.
  2. In a large pan, heat the olive oil over medium heat.
  3. Add in the bell peppers, snow peas, carrots, broccoli, and garlic, then stir-fry for about 8-10 minutes, or until the vegetables are tender.
  4. In a separate bowl, whisk together the soy sauce, cornstarch, and water, then pour the mixture over the vegetables in the pan.
  5. Continue to stir-fry the vegetables for a few more minutes, until the sauce has thickened.
  6. Remove the pan from the heat, and serve the vegetable stir-fry hot over cooked rice.
