
Quick & Easy Vegetable Stir-fry

Ingredients:
- 2 tbsp Olive oil
- 2 cup Bell peppers
- 1 cup Snow peas
- 1 cup Carrots
- 1 cup Broccoli
- 2 cloves Garlic
- 1/4 cup Soy sauce
- 1 tbsp Cornstarch
- 1 tbsp Water
- 3 cups Cooked rice
Instructions:
- Prepare the vegetables by cutting them into bite-sized pieces.
- In a large pan, heat the olive oil over medium heat.
- Add in the bell peppers, snow peas, carrots, broccoli, and garlic, then stir-fry for about 8-10 minutes, or until the vegetables are tender.
- In a separate bowl, whisk together the soy sauce, cornstarch, and water, then pour the mixture over the vegetables in the pan.
- Continue to stir-fry the vegetables for a few more minutes, until the sauce has thickened.
- Remove the pan from the heat, and serve the vegetable stir-fry hot over cooked rice.
