Quick & Easy Vegetable Samosas

Ingredients:

  • 2 tablespoons vegetable oil
  • 1 cup frozen peas and carrots
  • 1 small chopped onion
  • 2 teaspoons curry powder
  • 1/4 teaspoon cayenne pepper
  • 1 package frozen puff pastry
  • 1 egg beaten egg

Instructions:

  1. Heat vegetable oil over medium heat in a pan
  2. Add peas, carrots and onion. Cook until softened
  3. Stir in curry powder and cayenne pepper.
  4. Unfold the puff pastry sheets, and cut each one into 9 squares.
  5. Spoon some of the vegetable mixture onto the center of each square. Fold the pastry over from corner to corner into a triangle shape, and seal the edges with the beaten egg.
  6. Place the samosas on a baking tray and brush the tops with beaten egg.
  7. Bake in the preheated oven for 10-15 minutes, or until golden brown.
