
Quick & Easy Vegetable Samosas

Ingredients:
- 2 tablespoons vegetable oil
- 1 cup frozen peas and carrots
- 1 small chopped onion
- 2 teaspoons curry powder
- 1/4 teaspoon cayenne pepper
- 1 package frozen puff pastry
- 1 egg beaten egg
Instructions:
- Heat vegetable oil over medium heat in a pan
- Add peas, carrots and onion. Cook until softened
- Stir in curry powder and cayenne pepper.
- Unfold the puff pastry sheets, and cut each one into 9 squares.
- Spoon some of the vegetable mixture onto the center of each square. Fold the pastry over from corner to corner into a triangle shape, and seal the edges with the beaten egg.
- Place the samosas on a baking tray and brush the tops with beaten egg.
- Bake in the preheated oven for 10-15 minutes, or until golden brown.
