
Quick & Easy Vegetable Ratatouille

Ingredients:
- 1 medium eggplant
- 2 medium zucchini
- 1 medium red bell pepper
- 1 medium onion
- 2 garlic cloves
- 1 can canned diced tomatoes
- 3 tablespoons extra virgin olive oil
- 1 teaspoon fresh thyme
- Handful fresh basil
- To Taste salt and pepper
Instructions:
- Wash and chop all the vegetables into bite-sized pieces.
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the onion and garlic and cook until soft.
- Add the eggplant, zucchini, and bell pepper and sauté until they begin to soften, about 10 minutes.
- Add the canned tomatoes, thyme, and basil. Season with salt and pepper.
- Reduce the heat to low, cover the pot, and simmer for about 20 minutes until everything is tender.
- Serve warm or at room temperature.
