Quick & Easy Vegetable Ratatouille

Ingredients:

  • 1 medium eggplant
  • 2 medium zucchini
  • 1 medium red bell pepper
  • 1 medium onion
  • 2 garlic cloves
  • 1 can canned diced tomatoes
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon fresh thyme
  • Handful fresh basil
  • To Taste salt and pepper

Instructions:

  1. Wash and chop all the vegetables into bite-sized pieces.
  2. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the onion and garlic and cook until soft.
  3. Add the eggplant, zucchini, and bell pepper and sauté until they begin to soften, about 10 minutes.
  4. Add the canned tomatoes, thyme, and basil. Season with salt and pepper.
  5. Reduce the heat to low, cover the pot, and simmer for about 20 minutes until everything is tender.
  6. Serve warm or at room temperature.
