
Quick & Easy Vegetable Pasta Primavera

Ingredients:
- 8 ounces pasta
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 whole red bell pepper
- 1 whole zucchini
- 8 stalks asparagus
- 2 whole tomatoes
- 1/4 cup basil leaves
- 1/2 cup parmesan cheese
- to taste salt and pepper
Instructions:
- Boil pasta in a large pot of salted water until al dente.
- While pasta is cooking, heat olive oil in a large skillet over medium heat. Add finely chopped garlic and cook until fragrant.
- Add thinly sliced bell pepper, chopped zucchini, and asparagus cut into 1.5 inch pieces to the skillet. Cook until vegetables are tender.
- Drain pasta and add it to the skillet with vegetables. Mix well.
- Add diced tomatoes, fine chopped basil leaves, and parmesan cheese to the skillet. Stir until cheese has melted.
- Season with salt and pepper to taste. Stir well, then remove from heat.
- Serve immediately, garnished with additional parmesan cheese if desired.
