Quick & Easy Vegetable Pasta Primavera

Ingredients:

  • 8 ounces pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 whole red bell pepper
  • 1 whole zucchini
  • 8 stalks asparagus
  • 2 whole tomatoes
  • 1/4 cup basil leaves
  • 1/2 cup parmesan cheese
  • to taste salt and pepper

Instructions:

  1. Boil pasta in a large pot of salted water until al dente.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat. Add finely chopped garlic and cook until fragrant.
  3. Add thinly sliced bell pepper, chopped zucchini, and asparagus cut into 1.5 inch pieces to the skillet. Cook until vegetables are tender.
  4. Drain pasta and add it to the skillet with vegetables. Mix well.
  5. Add diced tomatoes, fine chopped basil leaves, and parmesan cheese to the skillet. Stir until cheese has melted.
  6. Season with salt and pepper to taste. Stir well, then remove from heat.
  7. Serve immediately, garnished with additional parmesan cheese if desired.
