
Quick & Easy Thai Veggie Stir-fry

Ingredients:
- 1 bag Stir-fry vegetables
- 2 tablespoons Olive oil
- 4 cloves Garlic
- 1 teaspoon Ginger
- 2 tablespoons Soy sauce
- 3 tablespoons Red Thai curry paste
- 1 can Coconut milk
- 1 whole Lime
- 2 cups Basmati rice
- a handful Coriander
Instructions:
- Prep your stir-fry vegetables as needed. Frozen stir-fry mix is a great time-saver.
- In a large skillet or wok, heat the olive oil over medium-high heat, then add the minced garlic and ginger, stirring for about a minute.
- Add the stir-fry vegetables to your pan. Cook until the veggies are tender, about 5-7 minutes.
- Stir in the soy sauce and Thai curry paste, and then pour in your can of coconut milk. Mix everything until evenly coated.
- In a separate pot, cook your basmati rice according to package instructions.
- Squeeze the juice of a whole lime into the pan and mix it in.
- Serve your Thai veggie stir-fry over the basmati rice, and garnish with fresh coriander leaves. Enjoy this quick and easy, yet delicious dinner!
