Quick & Easy Thai Veggie Stir-fry

Ingredients:

  • 1 bag Stir-fry vegetables
  • 2 tablespoons Olive oil
  • 4 cloves Garlic
  • 1 teaspoon Ginger
  • 2 tablespoons Soy sauce
  • 3 tablespoons Red Thai curry paste
  • 1 can Coconut milk
  • 1 whole Lime
  • 2 cups Basmati rice
  • a handful Coriander

Instructions:

  1. Prep your stir-fry vegetables as needed. Frozen stir-fry mix is a great time-saver.
  2. In a large skillet or wok, heat the olive oil over medium-high heat, then add the minced garlic and ginger, stirring for about a minute.
  3. Add the stir-fry vegetables to your pan. Cook until the veggies are tender, about 5-7 minutes.
  4. Stir in the soy sauce and Thai curry paste, and then pour in your can of coconut milk. Mix everything until evenly coated.
  5. In a separate pot, cook your basmati rice according to package instructions.
  6. Squeeze the juice of a whole lime into the pan and mix it in.
  7. Serve your Thai veggie stir-fry over the basmati rice, and garnish with fresh coriander leaves. Enjoy this quick and easy, yet delicious dinner!
