
Quick & Easy Thai Vegetable Stir Fry

Ingredients:
- 2 tbsp Oil
- 2 cloves Garlic
- 1 tbsp Ginger
- 1 Carrot
- 1 Red Bell Pepper
- 1 cup Broccoli
- 1 cup Bok Choy
- 2 tbsp Soy Sauce
- 1 Lime
- 1 tbsp Brown Sugar
- 2 tbsp Thai Basil
Instructions:
- Heat oil in pan over medium heat.
- Add minced garlic and ginger, cook for 2 minutes.
- Add carrots, cook for 2 minutes.
- Add red bell pepper and broccoli, stir fry for 3-4 minutes or until vegetables are tender.
- Add bok choy, stir fry until wilted.
- In a small bowl, combine soy sauce, lime juice, and brown sugar to create sauce.
- Pour the sauce over the cooked vegetables, stirring well to coat.
- Stir in Thai basil, cook for another 1-2 minutes. Remove from heat.
- Serve and enjoy!
