Quick & Easy Thai Vegetable Stir Fry

Ingredients:

  • 2 tbsp Oil
  • 2 cloves Garlic
  • 1 tbsp Ginger
  • 1 Carrot
  • 1 Red Bell Pepper
  • 1 cup Broccoli
  • 1 cup Bok Choy
  • 2 tbsp Soy Sauce
  • 1 Lime
  • 1 tbsp Brown Sugar
  • 2 tbsp Thai Basil

Instructions:

  1. Heat oil in pan over medium heat.
  2. Add minced garlic and ginger, cook for 2 minutes.
  3. Add carrots, cook for 2 minutes.
  4. Add red bell pepper and broccoli, stir fry for 3-4 minutes or until vegetables are tender.
  5. Add bok choy, stir fry until wilted.
  6. In a small bowl, combine soy sauce, lime juice, and brown sugar to create sauce.
  7. Pour the sauce over the cooked vegetables, stirring well to coat.
  8. Stir in Thai basil, cook for another 1-2 minutes. Remove from heat.
  9. Serve and enjoy!
