
Quick & Easy Thai Seafood Stir Fry

Ingredients:
- 500 grams prawns, peeled and deveined
- 250 grams squid, cleaned and sliced
- 12 items mussels, scrubbed and de-bearded
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 2 items bird's eye chili, chopped
- 2 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 2 items spring onion, chopped
- 1 handful basil leaves
Instructions:
- Heat the vegetable oil in a wok or large frying pan over medium-high heat.
- Add the garlic and chili, stir fry for 30 seconds until fragrant.
- Add the prawns, squid, and mussels to the pan and stir-fry for about 2-3 minutes, just until the seafood starts to turn pink.
- Add the oyster sauce, soy sauce, and sugar. Stir to combine and cook for another 2 minutes.
- Stir in the spring onions and basil leaves, cook for another minute.
- Serve hot, garnish with extra spring onions and basil if desired.
