Quick & Easy Thai Seafood Stir Fry

Ingredients:

  • 500 grams prawns, peeled and deveined
  • 250 grams squid, cleaned and sliced
  • 12 items mussels, scrubbed and de-bearded
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 2 items bird's eye chili, chopped
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 2 items spring onion, chopped
  • 1 handful basil leaves

Instructions:

  1. Heat the vegetable oil in a wok or large frying pan over medium-high heat.
  2. Add the garlic and chili, stir fry for 30 seconds until fragrant.
  3. Add the prawns, squid, and mussels to the pan and stir-fry for about 2-3 minutes, just until the seafood starts to turn pink.
  4. Add the oyster sauce, soy sauce, and sugar. Stir to combine and cook for another 2 minutes.
  5. Stir in the spring onions and basil leaves, cook for another minute.
  6. Serve hot, garnish with extra spring onions and basil if desired.
