
Quick & Easy Thai Mango Chicken Stir-Fry

Ingredients:
- 2 pieces Boneless chicken breasts
- 2 pieces Ripe mangoes
- 1 piece Red bell pepper
- 1 piece Onion
- 3 cloves Garlic cloves
- 2 inches piece Fresh ginger
- 2 tbsp Soy sauce
- 2 tbsp Brown sugar
- 1/2 tsp Chili flakes
- 2 tbsp Olive oil
- a handful Fresh coriander leaves
- 2 cups Basmati rice
Instructions:
- 1. Dice the chicken into pieces and cut the mangoes, red bell pepper, and onion into thin strips.
- 2. Mince the garlic and grate the ginger.
- 3. In a bowl, combine the soy sauce, brown sugar, and chili flakes to create the stir fry sauce.
- 4. Heat the olive oil in a wok or large frying pan over medium-high heat.
- 5. Add garlic and ginger to the pan and cook until fragrant.
- 6. Add the chicken to the pan and cook until it turns white.
- 7. Add the mangoes, red bell pepper, and onion to the pan. Cook until the vegetables are soft.
- 8. Pour the stir fry sauce over the chicken and vegetables. Stir well to combine.
- 9. Serve the stir fry over basmati rice and garnish with fresh coriander leaves.
