Quick & Easy Thai Mango Chicken Stir-Fry

Ingredients:

  • 2 pieces Boneless chicken breasts
  • 2 pieces Ripe mangoes
  • 1 piece Red bell pepper
  • 1 piece Onion
  • 3 cloves Garlic cloves
  • 2 inches piece Fresh ginger
  • 2 tbsp Soy sauce
  • 2 tbsp Brown sugar
  • 1/2 tsp Chili flakes
  • 2 tbsp Olive oil
  • a handful Fresh coriander leaves
  • 2 cups Basmati rice

Instructions:

  1. 1. Dice the chicken into pieces and cut the mangoes, red bell pepper, and onion into thin strips.
  2. 2. Mince the garlic and grate the ginger.
  3. 3. In a bowl, combine the soy sauce, brown sugar, and chili flakes to create the stir fry sauce.
  4. 4. Heat the olive oil in a wok or large frying pan over medium-high heat.
  5. 5. Add garlic and ginger to the pan and cook until fragrant.
  6. 6. Add the chicken to the pan and cook until it turns white.
  7. 7. Add the mangoes, red bell pepper, and onion to the pan. Cook until the vegetables are soft.
  8. 8. Pour the stir fry sauce over the chicken and vegetables. Stir well to combine.
  9. 9. Serve the stir fry over basmati rice and garnish with fresh coriander leaves.
