Quick & Easy Thai Fruit Salad

Ingredients:

  • 4 cups mixed tropical fruits (mango, pineapple, papaya, dragon fruit)
  • 1 whole lime
  • 1/2 cup Thai basil leaves
  • 1/2 cup fresh mint leaves
  • 2 tablespoons honey
  • 1 whole red chili
  • 1/2 salted peanuts

Instructions:

  1. Start by preparing the fruits. Peel and cube the mango, pineapple, papaya and dragon fruit. Place the cubed fruits into a large mixing bowl.
  2. To make the dressing, squeeze the juice out of the lime into a small bowl. Slice the red chili and add it to the bowl along with the honey. Stir until the honey dissolves fully into the lime juice.
  3. Pour the dressing over the fruits and toss gently until all the fruits are coated.
  4. Roughly chop the Thai basil leaves and mint leaves, and add them into the bowl. Toss the fruit salad again.
  5. Just before serving, sprinkle the salted peanuts over the salad for some extra crunch.
  6. Serve the delicious Thai fruit salad immediately for best taste. Enjoy!
