
Quick & Easy Thai Fruit Salad

Ingredients:
- 4 cups mixed tropical fruits (mango, pineapple, papaya, dragon fruit)
- 1 whole lime
- 1/2 cup Thai basil leaves
- 1/2 cup fresh mint leaves
- 2 tablespoons honey
- 1 whole red chili
- 1/2 salted peanuts
Instructions:
- Start by preparing the fruits. Peel and cube the mango, pineapple, papaya and dragon fruit. Place the cubed fruits into a large mixing bowl.
- To make the dressing, squeeze the juice out of the lime into a small bowl. Slice the red chili and add it to the bowl along with the honey. Stir until the honey dissolves fully into the lime juice.
- Pour the dressing over the fruits and toss gently until all the fruits are coated.
- Roughly chop the Thai basil leaves and mint leaves, and add them into the bowl. Toss the fruit salad again.
- Just before serving, sprinkle the salted peanuts over the salad for some extra crunch.
- Serve the delicious Thai fruit salad immediately for best taste. Enjoy!
