
Quick & Easy Thai Egg Fried Rice

Ingredients:
- 4 cups Cooked white rice
- 4 units Large eggs
- 3 tablespoons Vegetable oil
- 2 cloves Garlic
- 2 tablespoons Soy sauce
- 2 units Green onions
- 1 unit Fresh lime
- 1/4 cup Chopped peanuts
- To taste units Salt and pepper
Instructions:
- Beat the eggs in a bowl and season with a little salt and pepper.
- Heat 1 tablespoon of the oil in a wok or large frying pan, add the beaten eggs and scramble. Once cooked, remove from the pan and set aside.
- In the same pan, add another tablespoon of oil and the finely chopped garlic. Stir fry for a minute until the garlic is golden.
- Add the cooked rice to the pan and stir fry for a few minutes until the rice is hot and coated in the garlic oil.
- Add the scrambled eggs back into the pan, along with the soy sauce, and stir through the rice.
- Finally, stir in the chopped green onions, the juice from the lime, and the chopped peanuts. Serve immediately.
