Quick & Easy Thai Egg Fried Rice

Ingredients:

  • 4 cups Cooked white rice
  • 4 units Large eggs
  • 3 tablespoons Vegetable oil
  • 2 cloves Garlic
  • 2 tablespoons Soy sauce
  • 2 units Green onions
  • 1 unit Fresh lime
  • 1/4 cup Chopped peanuts
  • To taste units Salt and pepper

Instructions:

  1. Beat the eggs in a bowl and season with a little salt and pepper.
  2. Heat 1 tablespoon of the oil in a wok or large frying pan, add the beaten eggs and scramble. Once cooked, remove from the pan and set aside.
  3. In the same pan, add another tablespoon of oil and the finely chopped garlic. Stir fry for a minute until the garlic is golden.
  4. Add the cooked rice to the pan and stir fry for a few minutes until the rice is hot and coated in the garlic oil.
  5. Add the scrambled eggs back into the pan, along with the soy sauce, and stir through the rice.
  6. Finally, stir in the chopped green onions, the juice from the lime, and the chopped peanuts. Serve immediately.
