Quick & Easy Thai Breakfast Shrimp Scramble

Ingredients:

  • 200 grams medium-sized shrimps
  • 4 number large eggs
  • 2 tablespoons soy sauce
  • 2 teaspoons minced garlic
  • handful chopped spring onions
  • 2 number sliced red chili peppers
  • 1 tablespoon vegetable oil

Instructions:

  1. Beat the eggs in a bowl and set aside.
  2. Heat the oil in a non-stick frying pan over medium heat.
  3. Add the minced garlic to the pan and sauté until fragrant.
  4. Add the shrimps and cook until they turn pink, around 2-3 minutes.
  5. Pour the beaten eggs into the pan, then add the soy sauce.
  6. Stir gently to scramble the eggs with the shrimps.
  7. When the eggs are nearly set, toss in the chopped spring onions and sliced chili.
  8. Serve hot, directly from the pan.
