
Quick & Easy Sweet and Sour Pineapple Chicken

Ingredients:
- 1 pound Boneless, skinless chicken breasts
- 2 cups Fresh pineapple chunks
- 1 Red bell pepper
- 1 Onion
- 2 Garlic cloves
- 2 tablespoons Olive oil
- 1/4 cup Soy sauce
- 3 tablespoons Rice vinegar
- 2 tablespoons Cornstarch
- 2 tablespoons White sugar
- 2 cups Cooked white rice
Instructions:
- Cut chicken into bite-sized pieces, dice red bell pepper, onion and crush the garlic cloves.
- Heat olive oil in a large skillet over medium-high heat. Add chicken, and sauté until cooked through, about 5-7 minutes. Remove chicken from pan and set aside.
- Add more oil if needed, then add the bell pepper, onion, and garlic. Sauté until vegetables are tender, about 5 minutes.
- While vegetables are cooking, combine soy sauce, vinegar, sugar, and cornstarch in a small bowl. Stir until combined.
- Once the vegetables are tender, add the pineapple chunks and the cooked chicken back into the pan. Pour the soy sauce mixture over top, and stir until everything is coated and sauce begins to thicken.
- Serve over cooked white rice and enjoy.
