Quick & Easy Shrimp Tacos

Ingredients:

  • 1 pound Shrimp, peeled and deveined
  • 2 tablespoons Olive oil
  • 3 Garlic cloves, minced
  • 1.5 teaspoons Spice mix (cumin, chili powder, paprika)
  • 1 Lime, juiced
  • Salt to taste
  • 8 Corn tortillas
  • 1 Avocado, sliced
  • Chopped fresh cilantro
  • Salsa

Instructions:

  1. In a large pan, heat the olive oil over medium heat. Add garlic, and stir until fragrant.
  2. Add the shrimp, spice mix, juice from the lime, and salt. Cook until the shrimp are pink and opaque, about 5 minutes. Remove from heat.
  3. Warm the corn tortillas in a dry pan over medium heat, flipping once, until warm and pliable.
  4. Fill each tortilla with the cooked shrimp. Top with sliced avocado, chopped cilantro, and salsa.
  5. Serve immediately, with extra lime wedges on the side, if desired.
