
Quick & Easy Shrimp Stir Fry

Ingredients:
- 1 lb Shrimp
- 4 cups Mixed vegetables
- 3 tablespoons Soy sauce
- 2 cloves Garlic
- 1 Tablespoon Ginger
- 2 tablespoons Cooking oil
- 4 cups Cooked white rice
Instructions:
- 1. Peel and devein the shrimp. Set aside.
- 2. Heat oil in a wok or large frying pan over medium heat. Add garlic and ginger and cook until fragrant.
- 3. Add mixed vegetables and stir fry until tender-crisp, about 5 minutes.
- 4. Add shrimp to the pan and cook until pink, 2-3 minutes each side.
- 5. Pour in the soy sauce and stir until evenly combined.
- 6. Serve the stir-fry over cooked white rice.
