Quick & Easy Shrimp Scampi

Ingredients:

  • 1 pound Shrimp
  • 3 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1/2 teaspoon Red Pepper Flakes
  • 1/2 cup White Wine
  • 1 juiced Lemon
  • 2 tablespoons Parsley
  • 2 tablespoons Butter
  • to taste Salt
  • to taste Black Pepper
  • 8 ounces Spaghetti

Instructions:

  1. 1. In a large pot, bring water to a boil and cook the spaghetti according to the package instructions. Once cooked, drain and set aside.
  2. 2. While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes, cook until fragrant.
  3. 3. Add the shrimp to the skillet, season with salt and pepper. Cook until the shrimp is pink, about 3-4 minutes.
  4. 4. Remove the shrimp from the skillet and set aside.
  5. 5. In the same skillet, add the white wine and lemon juice. Let it simmer for a few minutes to reduce.
  6. 6. Add the butter and parsley to the skillet, stir until the butter is completely melted.
  7. 7. Return the shrimp to the skillet and toss to coat in the sauce.
  8. 8. Add the cooked spaghetti to the skillet and toss until fully coated in the sauce.
  9. 9. Serve warm with a sprinkle of parsley and grated Parmesan cheese on top.
