
Quick & Easy Shrimp Scampi

Ingredients:
- 1 pound Shrimp
- 3 tablespoons Olive Oil
- 2 cloves Garlic
- 1/2 teaspoon Red Pepper Flakes
- 1/2 cup White Wine
- 1 juiced Lemon
- 2 tablespoons Parsley
- 2 tablespoons Butter
- to taste Salt
- to taste Black Pepper
- 8 ounces Spaghetti
Instructions:
- 1. In a large pot, bring water to a boil and cook the spaghetti according to the package instructions. Once cooked, drain and set aside.
- 2. While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes, cook until fragrant.
- 3. Add the shrimp to the skillet, season with salt and pepper. Cook until the shrimp is pink, about 3-4 minutes.
- 4. Remove the shrimp from the skillet and set aside.
- 5. In the same skillet, add the white wine and lemon juice. Let it simmer for a few minutes to reduce.
- 6. Add the butter and parsley to the skillet, stir until the butter is completely melted.
- 7. Return the shrimp to the skillet and toss to coat in the sauce.
- 8. Add the cooked spaghetti to the skillet and toss until fully coated in the sauce.
- 9. Serve warm with a sprinkle of parsley and grated Parmesan cheese on top.
