Quick & Easy Shrimp Fried Rice

Ingredients:

  • 3 cups Cooked rice
  • 1 pound Raw shrimp
  • 1 cup Green peas
  • 1 cup Diced carrots
  • 3 tablespoons Soy sauce
  • 2 whole Eggs
  • 2 tablespoons Sesame oil
  • 1/2 cup Chopped green onions

Instructions:

  1. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat.
  2. Add the shrimp and cook until pink. Remove from the skillet and set aside.
  3. In the same skillet, add remaining oil, then add carrots and peas. Cook until they begin to soften.
  4. Push the vegetables to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked through and mix with the vegetables.
  5. Stir in the cooked rice, then add the soy sauce. Stir until well combined.
  6. Return the shrimp to the skillet and stir to combine.
  7. Garnish with green onions before serving.
