
Quick & Easy Shrimp Fried Rice

Ingredients:
- 3 cups Cooked rice
- 1 pound Raw shrimp
- 1 cup Green peas
- 1 cup Diced carrots
- 3 tablespoons Soy sauce
- 2 whole Eggs
- 2 tablespoons Sesame oil
- 1/2 cup Chopped green onions
Instructions:
- Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat.
- Add the shrimp and cook until pink. Remove from the skillet and set aside.
- In the same skillet, add remaining oil, then add carrots and peas. Cook until they begin to soften.
- Push the vegetables to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked through and mix with the vegetables.
- Stir in the cooked rice, then add the soy sauce. Stir until well combined.
- Return the shrimp to the skillet and stir to combine.
- Garnish with green onions before serving.
