
Quick & Easy Midnight Tropical Fruit Sushi

Ingredients:
- 1 cup sushi rice
- 2 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 medium size ripe mango
- 1 medium size ripe avocado
- 4 sheets nori sheets
- 2 tablespoons toasted sesame seeds
- for serving soy sauce
Instructions:
- Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a saucepan. Bring to a boil, then reduce the heat to low, cover and cook for 20 minutes. Rice should be tender and water should be absorbed. Cool until cool enough to handle.
- While the rice is cooking, peel and slice the avocado and mango into thin strips.
- In a small bowl, mix together the rice vinegar and sugar until the sugar is dissolved. Once the rice is cool, fold in the vinegar mixture.
- Place a nori sheet on a bamboo sushi mat or a piece of plastic wrap. Spread about 1/4 of the rice evenly onto the nori, leaving about 1 inch of the nori uncovered at the bottom. Sprinkle with sesame seeds.
- Arrange some slices of avocado and mango on top of the rice. Lift the end of the mat, and gently roll it over the ingredients, pressing gently. Roll it forward to make a complete roll. Repeat with remaining ingredients.
- Cut each roll into 1 inch pieces with a sharp knife. Serve with soy sauce. Enjoy your quick and satisfying midnight snack!
