
Quick & Easy Midnight Risotto

Ingredients:
- 1 cup Arborio Rice
- 1 small Onion
- 2 tbsp Butter
- 3 cups Chicken broth
- 1/2 cup Parmesan Cheese
- To Taste Salt and Pepper
Instructions:
- In a pan over medium heat, melt the butter. Add the chopped onion and cook until translucent.
- Stir in the Arborio rice, making sure to thoroughly coat it in the butter. Cook for about 2 minutes.
- Add a cup of chicken broth and stir until it is absorbed by the rice.
- Repeat with the remaining broth, adding one cup at a time and waiting for it to be absorbed before adding the next. This should take about 15 minutes in total.
- When the rice is creamy and tender, stir in the grated Parmesan cheese. Season with salt and pepper to taste.
- Serve immediately and enjoy your quick & easy midnight risotto!
