Quick & Easy Midnight Risotto

Ingredients:

  • 1 cup Arborio Rice
  • 1 small Onion
  • 2 tbsp Butter
  • 3 cups Chicken broth
  • 1/2 cup Parmesan Cheese
  • To Taste Salt and Pepper

Instructions:

  1. In a pan over medium heat, melt the butter. Add the chopped onion and cook until translucent.
  2. Stir in the Arborio rice, making sure to thoroughly coat it in the butter. Cook for about 2 minutes.
  3. Add a cup of chicken broth and stir until it is absorbed by the rice.
  4. Repeat with the remaining broth, adding one cup at a time and waiting for it to be absorbed before adding the next. This should take about 15 minutes in total.
  5. When the rice is creamy and tender, stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  6. Serve immediately and enjoy your quick & easy midnight risotto!
