
Quick & Easy Midnight Mexican Pasta

Ingredients:
- 200 grams Pasta
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1 teaspoon Chili powder
- 1 cup Canned diced tomatoes
- 1 cup Canned black beans
- 1/2 cup Shredded cheese
- as per taste Sour cream
- for garnish Fresh cilantro
Instructions:
- Boil the pasta according to the package instructions until al dente. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and sauté until it becomes fragrant.
- Add the chili powder to the skillet and stir for a few seconds until it is well combined with the oil and garlic.
- Stir in the diced tomatoes and black beans. Keep stirring for about 5 minutes or until the mixture is heated throughout.
- Add the cooked pasta to the skillet and stir until it is fully coated with the tomato and bean mixture.
- Remove the skillet from the heat and sprinkle the shredded cheese over the top of the pasta. Cover the skillet and let it sit for a minute or two until the cheese is melted.
- Serve hot with a dollop of sour cream on top and a garnish of fresh cilantro.
