Quick & Easy Midnight Mexican Pasta

Ingredients:

  • 200 grams Pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 teaspoon Chili powder
  • 1 cup Canned diced tomatoes
  • 1 cup Canned black beans
  • 1/2 cup Shredded cheese
  • as per taste Sour cream
  • for garnish Fresh cilantro

Instructions:

  1. Boil the pasta according to the package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and sauté until it becomes fragrant.
  3. Add the chili powder to the skillet and stir for a few seconds until it is well combined with the oil and garlic.
  4. Stir in the diced tomatoes and black beans. Keep stirring for about 5 minutes or until the mixture is heated throughout.
  5. Add the cooked pasta to the skillet and stir until it is fully coated with the tomato and bean mixture.
  6. Remove the skillet from the heat and sprinkle the shredded cheese over the top of the pasta. Cover the skillet and let it sit for a minute or two until the cheese is melted.
  7. Serve hot with a dollop of sour cream on top and a garnish of fresh cilantro.
